Paul and Maire Flynn opened the Tannery in 1997 in a disused leather warehouse and since then Paul with his team have been cooking in his own eclectic style.  Over the years, this has evolved into rustic and earthy cooking with a few whimsical twists.  Paul's cooking is always seasonal and can be inspired by whats growing in our garden, travel, even what he is reading. 

Since we opened the Cookery School in 2008, we have another dining option to offer our customers.  Experience classic private dining in old fashioned luxury with our Chef's Table Menu in the Tannery Cookery School dining room.  Eat local Rib of Beef carved at the table from our trolley in the company of others to ensure a uniquely memorable occasion.  This dinner party atmosphere is perfect for birthday or special occasion groups.  Our next open Chef's Table Menu is taking place on Sat 6th March.

CHEF FOR A DAY!!! Did you always want to work in a professional restuarant kitchen? Work alongside Paul and his team as they prepare for lunch and dinner and work on new dishes on a busy Friday.  This is an experience for the truly keen cook - maximum 2 persons can take place on this challenging opportunity.  Price €200 per person.  For further details email Maire on info@tannery.ie
